Recipe of lemon fish in papillote with zucchini chips

Today's recipe, a Lemon fish in papillote with zucchini chips It is as delicious as it is simple. You can prepare it with this fish, also known as milk in the Mediterranean area or with hake, sea bass, sea bream or other fish that you like. It is a light recipe, ideal for a dinner during pregnancy, or to take care of the line after delivery.

For its preparation we can prepare a papillote by wrapping the fish in aluminum foil or baking paper as when we made another light fish recipe, or as today that we are going to use one of the silicone cases which are very comfortable because they can be used both in the traditional oven or even in the microwave. In this recipe we will not stain anything !!

Ingredients for two people

  • Two pieces of about 200 gr of lemon fish loin, olive oil, fresh thyme, 1 medium or two small zucchini, salt to taste

How to make lemon fish in papillote with zucchini chips

To cook the fish in papillote, we put the loins in the case, lightly salted and water with a tablespoon extra virgin olive oil. On each loin we put a sprig of fresh thyme.

We put in the microwave at maximum power during a minute. We open, check if it is done - which will depend on each microwave - and if necessary repeat the operation until it is to our liking.

While the fish is made, we cut the zucchini into very thin slices and put them to brown in the pan with almost no oil over a high heat until they are golden and crispy like chips.

We serve the fish accompanied by zucchini chips and a dried tomato rehydrated to give the note of color and flavor. If we want we can already put on the plate, a little more fresh thyme to bring more aroma.
